large flour tortillas
soft, spreadable cheese
(Boursin, or some sort of cream cheese)
deli meat slices
(I use roast beef)
baby spinach
Instructions
Spread the cheese on the tortillas.

Add a layer of spinach and a layer of meat (leaving a couple inches uncovered on one side of the tortilla).

Roll it up, starting on the side opposite the uncovered portion (so the cheese can stick to the outside of the tortilla).
Wrap it in cling wrap, and refrigerate for at least an hour (to help the pinwheels retain their shape while slicing).
When serving, unwrap and slice off the ends, then use toothpicks to hold the roll together while slicing.
