Roast Beef Pinwheels

Equipment

  • Toothpicks
  • Cling Wrap

Ingredients
  

  • large flour tortillas
  • soft, spreadable cheese (Boursin, or some sort of cream cheese)
  • deli meat slices (I use roast beef)
  • baby spinach

Instructions
 

  • Spread the cheese on the tortillas.

  • Add a layer of spinach and a layer of meat (leaving a couple inches uncovered on one side of the tortilla).

  • Roll it up, starting on the side opposite the uncovered portion (so the cheese can stick to the outside of the tortilla).
  • Wrap it in cling wrap, and refrigerate for at least an hour (to help the pinwheels retain their shape while slicing).
  • When serving, unwrap and slice off the ends, then use toothpicks to hold the roll together while slicing.
